- oh I love Greek food - do you?
1 kilo (2 lbs 4 oz) pork
or lamb, or 1/2 or each mixed
12 "pita" bread
2-3 tomatoes, sliced
2 red
onions, sliced
1 teacup olive oil
2 tablespoon parsley, finally chopped
Salt-pepper
Oregano
"Tzatziki" (optional)
Greek Lamb/Pork Kebab
with Pita (Souvlaki)
Cut the pork into small cubes.
Spread a bit of oil salt, pepper and
oregano over all the meat.
Lift the meat out
of bowl and thread it on small
wooden skewers. Cook under a hot grill on both sides (about 7 minutes on each side).
Better still use a barbeque outside for better results.
Heat the "pita" bread.
Spread a bit of olive oil, salt, pepper and oregano over
the pita bread. Remove the
grilled pork from the skewers and place an appropriate amount of it on each"pita" bread, along with some
red onion, parsley, slices of tomato, salt, pepper
and some "tzatziki", if desired. Serve warm on individual dishes.
Note: Pork can be replaced with
lamb, if preferred.
If you prefer, you can omit pita bread, and serve it on a plate, with rice, or
French
fries, onions, tomatoes and parsley.
